No Bake Honey Granola Bars

2 ½ cups crispy rice cereal

2 cups oats

½ cup favorite dried fruit (raisins, cranberries, etc)

½ cup brown sugar

¼ cup Hyde’n Bee Honey

1 tablespoon water

½ cup peanut butter

1 teaspoon vanilla

¼ bag semi sweet or white chocolate chips

 

In a large bowl combine rice cereal, oats, and dried fruit; set aside.  In a small saucepan combine sugar, honey, and water.  Over med-low heat to dissolve sugar.  Bring to a light boil, stirring constantly.  Remove from heat.  Stir in peanut butter and vanilla quickly.  Pour over cereal mixture and stir to coat.  Add chocolate chips, gently mix, and pour into prepared pan.  Press to form bar.  Speed is a factor and if the sugar mixture cools too much it will not stick together well, but if the mixture is too hot the chips will melt before you form the bar.  Cool, cut and enjoy.
